Potassium hydroxide or caustic potash is an inorganic compound of the formula KOH. It forms colorless crystals and is highly hygroscopic. Potassium hydroxide is a solid, highly absorbent (hygroscopic) crystalline material at room temperature. It is a highly soluble substance in water and alcohol. It is completely soluble in aqueous solution and has a strongly caustic, alkaline solution.

It is used in laboratories as chemicals, in alkaline batteries as electrolytes and in the production of potassium soap and other potassium compounds. It is widely used in the food industry, such as chemical removal of fruit peel, chocolate and cocoa making, preservation of olives and some bakery products. It is used as a food additive under the name E525.
